- 1 package (30 oz.) frozen potato wedges
- 1 c. chopped fully cooked ham
- 6 slices thick-cut bacon, crisply cooked and crumbled
- 4-6 sweet mini-peppers, sliced into rings
- 1/2 c. thinly sliced green onions
- 1 c. grated cheese - choose your favorite variety
- 1/2 c. sour cream, for serving
Preheat the oven to 375°F. Spray 13x9-inch baking dish with cooking spray. Arrange the potato wedges in the baking dish; bake for 10-15 minutes or until the potatoes are thawed and beginning to brown. Top with half each of the ham, bacon, pepper rings, and green onions. Sprinkle the cheese on top. Sprinkle with the remaining ham, bacon, and pepper rings.
Bake for 20-30 minutes or until the cheese is melted and the potatoes are tender. Top with dollops of sour cream and the remaining green onions when serving.
