- 2 lb. lean flank steak
- cooking spray
- 1 1/3 c. chopped onion
- 2 cloves garlic, minced
- 1 c. beef broth
- 6 T. soy sauce
- 3 T. red wine vinegar
- 2 tsp. brown sugar
- 1 tsp. allspice
- 1 tsp. ground ginger
Score steak on both sides. Place in a zip-top plastic bag.
Coat a small skillet with cooking spray. Place over medium-high heat; when hot, add onion and garlic. Cook until tender, but not browned. Add beef broth and remaining ingredients. Bring to a boil and let cool. Pour marinade over steak; seal bag and shake until steak is well coated. Marinate steak in refrigerator for 8 hours.
Remove steak from bag and discard marinade. Place steak on the rack of a broiler pan coated with cooking spray. Broil 5 1/2-inches from heat 6-8 minutes on each side or to desired degree of doneness. Let stand 10 minutes. Cut steak diagonally across the grain into 1/4-inch slices.
To freeze, slice steak in half before marinating. Place half of steak and marinade in each of two labeled freezer bags. Freeze up to 3 months.
To prepare, thaw 1 package of steak in refrigerator or microwave and follow broiling directions above.
