Snowy Day Fruit & Nut Oatmeal

  • 1 c. water
  • 1 c. milk
  • 2 c. old fashioned oats - not instant
  • 2 T. maple syrup
  • 1 tsp. cinnamon
  • 1 apple, cored and chopped
  • ½ c. dried fruit - I used a combination of golden raisins, cranberries, cherries, dates, pears, and peaches
  • ¼ c. chopped nuts - I used walnuts

Combine the water and milk in a 2 quart or larger saucepan. Bring the mixture to a boi. Stir in the oats and, if desired, a pinch of salt. Reduce the heat to medium and cook (uncovered), stirring occasionally.

After 2 minutes of cooking, add the maple syrup, cinnamon, chopped apple, dried fruit, and nuts. Continue cooking for an additional 3-4 minutes or until the oats are creamy with a bit of bite left in them. Serve hot.

  • Yields: 3-4 servings
  • Preparation Time: 15 minutes
