- 1 pork tenderloin (16-20 oz.)
- 1 tablespoon seasoned salt - I used Kinder's Woodfired Garlic Seasoning
Preheat the oven to 225° F. Rub the pork tenderloin generously with the seasoning and allow to rest at room temperature while the oven preheats.
Roast the pork tenderloin in a shallow pan for up to an hour - until the internal temperature reaches 135° F. Use an instant read thermometer to determine this.
Let the meat rest for about 30 minutes to allow the juices to redistribute and the pork's internal temperature to rise as it rests. Turn the oven up to 500° F while the meat is resting.
Return the pork to the oven and let it caramelize for about 10 minutes before slicing it and serving it with the sides and condiments of your choosing.
