Peppermint Buttercream

  • 1 cup butter, softened
  • 41/2 cups confectioners’ sugar
  • 2 teaspoons peppermint extract
  1. In a medium bowl, beat butter and confectioners’ sugar at medium speed with an electric mixer until creamy. Add peppermint extract, beating until smooth.
  • Yields: About 2 cups
