- Basic crepes
- 2 cups mixed berries (I used blackberries, blueberries, and sliced strawberries)
- ½ cup sugar
- 1 T. cornstarch mixed with a bit of cold water
- Vanilla Greek Yogurt - optional
Prepare the crepes according to the linked recipe.
Meanwhile, prepare the filling by combining the berries and sugar in a medium saucepan and heating gently over medium heat. Stir often enough to combine and keep from scorching. Once the mixture begins to bubble, add the cornstarch mixture and stir well. Once the mixture has thickened to your desired consistency, remove it from the heat and allow it to cool before serving with the crepes and, if desired, yogurt.
