- 1 can cannellini beans, drained and rinsed well
- ½ English cucumber, diced
- 6 oz. grape or cherry tomatoes, halved
- 2 green onions, chopped
- ½ lemon, zested and juiced
- ½ teaspoon grainy mustard
- Salt and pepper
- Extra virgin olive oil, to taste
Add the cannellini beans, cucumbers, tomatoes, and green onions to a serving bowl.
Add the lemon zest and juice and the mustard, Season with salt and pepper. Add a generous drizzle of extra virgin olive oil (2 to 3 tablespoons). Stir the salad to combine. Taste and adjust seasoning.
