- 3 cups orzo pasta, prepped per package instructions
- ¼ cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 3 cloves garlic, minced
- 1 ½ cups fresh spinach, chopped
- ½ cup diced red pepper
- ½ cup walnuts, toasted and chopped
Prepare the orzo per package instructions. Drain but do not rinse the pasta. Allow to cool 5 minutes.
Meanwhile, whisk together the olive oil, lemon juice, zest, and garlic. Pour over the orzo and stir well.
Stir in the spinach, red pepper, and walnuts. Chill until ready to serve.
