- 1 lemon, juiced
- 1 tablespoon maple syrup
- 2 tablespoon grainy mustard
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ cup diced sun dried tomatoes
- ½ cucumber, diced
- ¼ cup diced fresh herbs - I used cilantro
- ½ cup sliced green onions
- 1 ½ cups cooked brown lentils, drained
Combine the first 5 ingredients (lemon through pepper) in a jar; seal and shake vigorously to combine.
Prepare the lentils (either use prepackaged, cooked lentils or simmer 1 cup of lentils in 3 cups of water for about 20 minutes before rinsing and draining them) and all of the vegetables; add them to a large bowl. Drizzle the dressing over the top, toss well to coat, and enjoy.
