Lemon Lentil Salad

  • 1 lemon, juiced
  • 1 tablespoon maple syrup
  • 2 tablespoon grainy mustard
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup diced sun dried tomatoes
  • ½ cucumber, diced
  • ¼ cup diced fresh herbs - I used cilantro
  • ½ cup sliced green onions
  • 1 ½ cups cooked brown lentils, drained

Combine the first 5 ingredients (lemon through pepper) in a jar; seal and shake vigorously to combine.

Prepare the lentils (either use prepackaged, cooked lentils or simmer 1 cup of lentils in 3 cups of water for about 20 minutes before rinsing and draining them) and all of the vegetables; add them to a large bowl. Drizzle the dressing over the top, toss well to coat, and enjoy.

  • Yields: 3-4 servings
  • Preparation Time: 20 minutes (35 minutes if making the lentils from scratch)
