Irish Shortbread

  • 8 oz. butter
  • 4 oz. caster sugar
  • 8 oz. flour
  • 2 oz. cornflour

Cream butter and sugar. Add flour and corn flour. Cut into squares or into rounds and bake in a slow oven until done.

  • Yields: 1 serving -- you'd better make a lot of these!
