- 4 large carrots, scrubbed well and cut into small pieces (I like to use a variety of colors of carrots and I do not peel them)
- 2 T. olive oil
- 2 T. honey
- Salt and pepper, to taste
- 1 tsp. ground cumin
- 1 tsp. smoked paprika
- 1 tsp. granulated garlic
Preheat the oven to 425°F.
Spread the carrots evenly in a 9 x 13" glass baking dish. Drizzle them evenly with oil and honey and toss gently to combine. Season with the remaining ingredients. Toss again lightly to distribute the seasonings.
Roast the carrots until they are tender and just lightly browned, about 25 minutes. Season with more salt and pepper, if desired, before serving.
