- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 1 1/8 cups white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 banana
- 2/3 cup peanut butter
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups rolled oats
- 1 1/2 cups milk chocolate chunks
Preheat the oven to 350 degrees F. Spray a 9x13-inch baking pan with cooking spray and set aside.
In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla, banana, and peanut butter. Combine the flour, baking powder, baking soda and salt; gradually stir into the creamed mixture. Finally, stir in the rolled oats and chocolate chunks. Spread the batter evenly into the prepared baking pan. Bake in the preheated oven for 40-50 minutes or until the bars are golden brown.
Remove to a wire rack and cool completely before cutting and serving. Store any unserved bars covered at room temperature.
