Fried Eggs on Harissa Whipped Goat Cheese

  • 1 avocado, cubed
  • ½ cup tender herbs, such as cilantro and/or dill
  • 2 tablespoons spicy marinated peppers
  • 1 cup chopped cucumber
  • 2 tablespoons chopped green onions
  • 1 tablespoon sesame seeds
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon lemon juice
  • Sea salt, to taste
  • 4 ounces goat cheese
  • 2-3 teaspoons hot honey
  • Black pepper, to taste
  • 1 teaspoon red harissa
  • 3 eggs, cooked to your taste
  • Naan or toast, for serving

Combine all of the salad ingredients (avocado through lemon juice) in a bowl. Season with sea salt; set aside.

Add the goat cheese, honey, and a pinch of salt to a food processor and pulse until smooth and creamy. Spoon into 3 serving bowls and swirl with harissa; set aside.

Cook and add the eggs and avocado salad to the bowl with the harissa goat cheese. Enjoy with naan or toast.
