These tangy salads don't need any dressing.
- 1/4 c. coarsely chopped walnuts
- 2 c. baby spinach greens
- 4 T. dried cranberries
- 4 T. crumbled feta cheese
Toast the walnuts by laying them in a single layer on a baking sheet. Broil under the broiler for 2 minutes. Remove from the oven and allow to cool slightly.
Divide the remaining ingredients between two salad bowls. Sprinkle evenly with the toasted walnuts and serve.
