- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons sugar
- 3 eggs
- 3/4 cup cottage cheese
- 1/2 cup skim milk
- 2 tablespoons canola oil
In a large bowl, mix together the flour, baking soda, salt and sugar.
In a separate bowl, whisk together the eggs, cottage cheese, milk and oil.
Slowly add the flour mixture to the cottage cheese mixture and stir just until blended. Don't over mix.
To make the waffles, pour the batter into a hot waffle iron that has been sprayed with oil. I like to use an ice cream disher to help fill the waffle iron about 2/3 full (to allow for expansion upon cooking) with batter. Cook each waffle for 3-4 minutes, or until golden brown with crisp edges.
