- 2-3 teaspoons olive oil
- 1 round of pizza dough - store bought or homemade
- ½ cup curry sauce - store bought or homemade (I used some leftover quick curry from Quick Curried Salmon
- 1 ½ cups chopped or shredded cooked chicken - I used rotisserie chicken
- 1 tablespoon coconut oil
- ½ cup sliced hot peppers
- ½ cup sliced sweet peppers
- 1 cup trimmed and 1" cut green beans
- ⅔ cup crumbled goat cheese
Preheat the oven to 450° F.
Rub a 10-12 inch cast iron skillet evenly with the olive oil, coating the bottom and sides of the skillet. Press the dough evenly over the bottom and halfway up the sides of the skillet.
Toss the curry sauce and the chicken together to evenly coat the chicken. Spread all of it over the bottom of the dough in the pan.
Heat the coconut oil over medium-high heat in a skillet or sauté pan. Add the peppers and green beans and sauté until crisp-tender and the edges of it all are slightly browned. Cool a little and then add to the top of the pizza. Sprinkle the top of the pizza with the crumbled goat cheese.
Bake the pizza in the preheated oven for 16-18 minutes or until the edges are puffy and crisp. Allow the pizza to rest for 5-10 minutes before slicing and enjoying.
