- 2 c. coarsely shredded carrots
- 1/2 c. dried cranberries
- 2 T. chopped fresh mint
- 2 T. olive oil
- 1 1/2 T. lemon juice
- 1 clove garlic, minced
- 1/2 tsp. sugar
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground cumin
- 1/8 tsp. salt
- 1/8 tsp. ground red pepper
In a large bowl, toss together the carrots, dried cranberries and mint.
In a small bowl, stir together the remaining ingredients to make the dressing. Pour this dressing over the salad and toss to combine.
