Back to school time is bittersweet for many parents. Gone are the "I'm bored" afternoons of the summer, but so are the lazy days. Instead, in addition to getting the kids to school in a way that has them mostly ready for the day, we're faced with an ever-increasing list of after-school activities, PTO meetings, fundraisers, and play dates. It's sometimes a wonder that we manage to feed our families dinner at all, so it's especially lovely when you get a chance to do so with the help of your kids. Case in point:
That's a beautiful pan of pizza. Pizza? Well, kinda. Imagine the wayward child of bubble bread and pepperoni pizza. Now, in addition to being pretty quick and easy to put together, it is also a great dish to make with kids. In fact, if your kids are a little older, they could make it entirely on their own. Older kids can cut the biscuits and pour tomato sauce. Younger kids can layer on pepperoni and sprinkle it all with cheese. In the end, your group effort gives you this:
Now, of course, you can tweak the toppings on this dish the same way you would any pizza. Prefer sausage and olives? Go for it. Looking for one with a tex-mex twist? Use salsa instead of tomato sauce and chorizo, olives, green onions, and taco cheese as toppings. You get the idea. Make it yours and dig in with your family. This school year is going to be just fine!
Bubble Pizza
- 1 pkg. flakey refrigerated biscuits
- 2 c. tomato sauce
- 3 oz. sliced pepperoni
- 1 1/4 c. shredded cheese
Preheat the oven to 350° F. Spray a 9 x 13-inch baking pan with cooking spray. Set aside.
Using a pair of kitchen shears or a sharp knife and a cutting board, cut or slice the biscuits into 4 pieces each and place in the bottom of the 9 x 13-inch baking pan.Carefully pour an even layer of the tomato sauce over the biscuit pieces. Cover the biscuits and sauce with a layer of pepperoni and then sprinkle the top with shredded cheese.
Bake, uncovered, in the preheated oven for about 30 minutes or until the biscuits have risen and baked and the cheese is melted and bubbly. Allow to cool for about 5 minutes before serving, as it will be quite hot.
