Sometimes, you want a meal that can act as a flexible filler during a busy week. Maybe you are caught up in holiday preparations and you want to be able to make a fast dinner during the week or you have people visiting from out of town and you want a special brunch dish. It's nice to have recipes that will work in both cases. For me, that means a casserole that's brimming with biscuits, eggs, bacon, cheese, and some veggies:
This dish relies on refrigerated biscuits and takes its flavor cues from a blend of fantastic cheeses, sweet mini peppers, and crispy bacon. It's hard not to fall in love with it before it ever gets to the table. It's fast to make, doesn't require fussy ingredients, and will smell amazing as it bakes. If you're opting to serve it for breakfast or brunch, add a fresh fruit salad and coffee. If you want to offer it as a lunch or dinner option, a nice green salad and a chilled white wine dress it up for the occasion.
With lots of cooking, baking, and food prep happening this time of the year, a home cook's sweetest dream is having a few recipes like this that can offer a little breathing room and will bring smiles all around the table, no matter what time of the day you choose to serve it!
Cheesy Bacon Biscuit Casserole
- 1 egg
- 2 tablespoons milk
- 1/2 teaspoon granulated garlic
- 1 pkg. (16.3 oz) refrigerated biscuit dough
- 1/4 cup crumbled bleu cheese
- 1/2 cup thinly sliced sweet mini pepper
- 1/4 cup shredded cheddar
- 1/4 cup shredded Monterrey Jack cheese
- 3/4 cup cooked, crumbled bacon
Preheat the oven to 350° F. Spray a 9 x 9-inch baking dish with cooking spray. In a large bowl, beat the egg, milk, and granulated garlic with a wire whisk until smooth.
Separate the dough into individual biscuits and cut each biscuit into quarters. Gently stir the biscuit pieces into the egg mixture to coat evenly. Fold in the bleu cheese and sliced sweet mini peppers. Spoon the mixture into the prepared dish, arranging the biscuit pieces in a single layer. Sprinkle generously with the shredded cheeses and bacon.
Baked at 350° F for 23-25 minutes or until golden brown. You can either cut the casserole into squares or just pull it apart and serve immediately.
