I didn't used to like buffalo wings. But over the years, I've become more and more fond of spicy food. That said, I've never really loved how messy wings can be to enjoy. So this recipe is particularly loved by me. All the spicy, creamy combination of hot wings and blue cheese in a nice, handy pizza package. It was also a bit of a welcome home meal after my husband returned from his most recent field work trip for his research. He's more of a spice nut than I am … and I told him he could add extra buffalo sauce or hot chili oil to the pizza when eating it. But he didn't. I guess that makes it a winner!
When I first put the chicken on the pizza, I was worried that it would be a rather thin pie. But once I added the crumbled blue cheese, I knew it would be fine. Within minutes of putting it in the oven, our little nest was filled with the most amazing aromas and, when it emerged, the cheese was bubbly and the entire pizza had the look of something very special. And it was. This one's a keeper!
Buffalo Chicken Pizza
- Dough for 1 crust
- Cooking spray
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2/3 c. spicy buffalo sauce, divided
- 1 T. butter
- 1/3 c. mayonnaise
- 4 oz. blue cheese, crumbled
Preheat the oven to 400 degrees F. Spread the pizza crust dough evenly in a large pizza pan or a rectangular cookie sheet. Set aside.
Heat the cooking spray in a nonstick pan over medium-high heat. Add the chicken and sauté until golden brown. Add 1/3 cup of the buffalo sauce and cook for an additional 2 minutes. Add the butter to the pan and remove it from the heat, gently mixing the butter into the sauce.
In a separate bowl, blend the remaining 1/3 cup of buffalo sauce and the mayonnaise. Spread the mixture evenly over the prepared pizza crust. Add the cooked, seasoned chicken. Sprinkle liberally with the crumbled blue cheese.
Bake the pizza in the preheated oven for 15-18 minutes or until the crust is browned and the cheese is melted. Serve hot.
