A chilled glass of white wine or ice tea would make a fine accompaniment, as would a slice or two of fresh, crusty bread. Neither is required, but they take it to a classy dinner level, as opposed to a more casual lunch meal. I'd happily serve this salad to guests and relax out back with cups of tangy fruit sorbet on a hot day. Welcome, summer!
Smoked Chicken Club Salad
- 8 oz. mixed salad greens
- 2 T. thinly sliced sweet onions
- 1/2 small kohlrabi, julienned
- 1 garlic scape, thinly sliced
- 1 medium tomato, cut into thin wedges
- 2 small breakfast radishes, sliced thinly
- 1 smoked chicken breast, shredded
- 6 oz. cheddar cheese, shredded
- 6-8 slices bacon, fried crisp and torn into small pieces
- Ranch dressing -- optional
