Salad Days ... Take Two

Last time I posted, there was singing about salads. This time, there's less singing, but still reason to rejoice, for there is yet another great salad that's graced my table. This one is inspired by a classic chicken club sandwich, boasting crisp greens, juicy tomatoes and smoky bacon. The addition of cheddar cheese and tangy ranch dressing makes it a great main dish meal instead of a skimpy side salad. Beyond that, it really holds the flavors of summer in one meal.

A chilled glass of white wine or ice tea would make a fine accompaniment, as would a slice or two of fresh, crusty bread. Neither is required, but they take it to a classy dinner level, as opposed to a more casual lunch meal. I'd happily serve this salad to guests and relax out back with cups of tangy fruit sorbet on a hot day. Welcome, summer!

Smoked Chicken Club Salad

  • 8 oz. mixed salad greens
  • 2 T. thinly sliced sweet onions
  • 1/2 small kohlrabi, julienned
  • 1 garlic scape, thinly sliced
  • 1 medium tomato, cut into thin wedges
  • 2 small breakfast radishes, sliced thinly
  • 1 smoked chicken breast, shredded
  • 6 oz. cheddar cheese, shredded
  • 6-8 slices bacon, fried crisp and torn into small pieces
  • Ranch dressing -- optional
Divide all of the ingredients evenly among two serving plates. Serve drizzled with ranch dressing, if desired.

  • Yields: 2 main dish salads
