These yummy wraps are filling with all of the great things you love to find in a perfect farmers' omelet. Simply tuck them into warm flour tortillas and eat them as is or, for a special treat, press them in a hot panini press to get a sandwich that's warmed through and through. Want more ideas? Farmers' Omelet Wraps
- 8 oz. bulk sausage
- 1/2 onion - chopped
- 1/2 red pepper - chopped
- 3 eggs
- 1/4 c. shredded cheese
- 2 - 10" flour tortillas
Heat a medium non-stick skillet over medium-high heat. Add the sausage and crumble and cook for 10 minutes or until almost browned. Add the onion and red pepper and continue cooking until the vegetables are softened and the sausage is cooked.
Crack the eggs into the skillet and cook, stirring frequently, for 3-5 minutes until the eggs are fully cooked. Divide the egg mixture and cheese evenly among the flour tortillas and wrap tightly. Serve immediately or, if desired, press in a panini press before serving.
