When March begins, winter still has a grip on most places. But, as the month progresses, spaces indoors and out begin to thaw and elements of spring take their place. The same is true of our tables. The transition to spring brings opportunities to enjoy foods we've either found difficult to procure or simply don't hold the same flavor as they do in this season. This month, we ask you to share your favorite springtime foods.
I tend to look forward to fresh asparagus in the spring. I love it steamed and tucked into an omelet or roasted and drizzled with a little oil, vinegar and garlic. For me, it's truly a sign of spring. Pair that lovely springtime omelet with a salad of fresh springtime greens and sliced strawberries and you've got a fantastic meal to welcome the season. Happy spring!
