Every year, I stock up on baking things for the holidays and every year, I end up with lots of extra leftover. But when it comes to chocolate chips, I now purposely make sure I've got more than I need. Why? Because I've discovered a simple, quick recipe for truffles that makes me swoon! But, instead of making them over the holidays, when sweets abound and time is always at a minimum, I wait until the holidays are past, things get a little quiet and I am craving something festive again.
There are several suggestions for tweaking this recipe as well. I'd recommend beginning with the basic recipe and adding other varieties in time. I love rolling these truffles in cocoa powder or even flavored hot chocolate mix! They also make a fantastic homemade Valentine's Day gift for someone special.

Super Simple Truffles
- 1 (8 ounce) package cream cheese -- softened
- 3 cups confectioners' sugar -- sifted
- 3 cups semisweet chocolate chips -- melted
- 1 1/2 teaspoons vanilla
In a large bowl, beat the cream cheese until smooth. Gradually beat in the confectioners' sugar until well blended. Stir in the melted chocolate and vanilla until no streaks remain. Refrigerate for about 1 hour. Shape into 1-inch balls.
Roll the truffles in ground walnuts (or any ground nuts), cocoa, coconut, confectioners' sugar, candy sprinkles, etc. To flavor the truffles with liqueurs or other flavorings, omit the vanilla. Divide the truffle mixture into thirds. Add 1 tablespoon liqueur (almond, coffee, orange) to each mixture; mix well.
