Happy Endings

In an effort to bring a little ease to our lives, I'm starting a three part series on how you can use mixes to make bringing sweetness to your table a bit easier. Whether it's adding twists to a mix to make something special or using a mix in a way not intended, these convenience products can lend sweetness to your life without taking a lot of time or energy.

We begin with brownies ... a family favorite. This month's recipe begins with a traditional brownie mix and adds coffee and cherry preserves to make something special. Making this mix with these special ingredients doesn't take any extra effort or time and the result is a great brownie with a strong mocha flavor and a touch of cherry. They are fantastic with a latte or your favorite coffee drink. You can tweak the kind of preserves you choose, but I highly recommend trying it this way at least once.

Cherry Cordial Brownies

  • 1 box brownie mix
  • 2 eggs
  • 1/4 c. strong coffee
  • 1/2 c. canola oil
  • 8 oz. cherry preserves

Preheat the oven to 350 degrees Fahrenheit. Mix all of the ingredients together. Feel free to add chopped nuts or chocolate chips. Pour into a greased 9 x 13-inch baking pan and bake for 35-40 minutes.
