Many people assume that dessert is a no-no if you are on a diet. On the contrary, many experts agree that swearing off sweets or other favorite foods altogether can often lead to overeating in the long run. Instead, it's best to exercise portion control and some creative recipes that give you a lot of flavor without a lot of calories.
That's where this month's recipe comes in.
Imagine a rich, creamy mousse that takes minutes to make and is low in fat, sugar and calories. While not technically a true mousse, this dessert's got all the makings of one without a lot of hassle or ingredients that are bad for you. It was introduced to me by my father-in-law, who is always looking for ways to enjoy his favorite foods without over-indulging. Many thanks to him for offering me -- and you -- a dessert that fits the bill and, when served in elegant dessert glasses, is company-ready. Now that's what I call a Happy New Year!

Quick & Healthy Pumpkin Mousse
- 1 (15 oz.) can pureed pumpkin -- NOT pie filling
- 1 (1 oz.) package sugar free, fat free instant butterscotch pudding mix
- Light whipped topping, if desired
Open the can of pumpkin and pour the contents into a medium-sized bowl. Sprinkle the pudding mix over the pumpkin and beat with a whisk for 2 minutes. Pour the mixture into individual dessert cups and transfer to the refrigerator. Allow to chill for at least 5 minutes before topping with the whipped topping, if desired, and serving.
