When the kids go back to school, you might get the impression that all they live on are peanut butter and jelly sandwiches. Well, why not join them? As long as you're opting for natural peanut butter and low sugar jam, you can make PBJs a healthy part of your diet.
To mix things up even a bit more, try adding whole wheat bread and banana to the party, toasting it and serving it for breakfast! Who said you can't be a cool parent? You can always have junior join you for this neat breakfast ... or pack one in his lunch!

PBJ Paninis
- 2 slices whole grain bread
- 2 T. natural peanut butter
- 2 T. strawberry jam
- 1/2 banana -- sliced thin
- Cooking spray
Spread one slice of the bread with peanut butter and the other slice with jam. Layer the banana over the peanut butter and place the slice with the strawberry jam over it.
Lightly spray the outside of the sandwich with cooking spray and either press in an electric panini maker or cook in a nonstick skillet for about 5 minutes, turning once, or until crispy and lightly browned.
