In a world where "I didn't have time" is one of the most heard phrases (aka excuses), one has to wonder where that leaves breakfast. For many, it becomes a cup of coffee and a donut or it gets ignored altogether. But it doesn't have to be that way. Breakfast can be quick and easy and portable. With that combination of characteristics, it suddenly becomes hard to argue with the idea of fitting breakfast into even the busiest of schedules.
To help offer help in this on-going struggle to properly fuel ourselves for our days, this column will be presenting a series of articles on putting together simple, portable AM meals for people on the go. We begin with one of my favorites. It's a simple egg sandwich that features ham and cheese -- something my father has been known to make in the early hours of the day for my mother as they prepare to get themselves to jobs that begin before many of us are even out of bed. I figure if it's good for keeping them going in the early morning, it's something that I can equally embrace a couple of hours later! Heck, this is one of those things that I've been known to throw together for a simple dinner when I don't feel like being fussy. Now that's a testament to a fast and easy meal!

Ham, Cheese & Egg Sandwich
- 1 tsp. olive oil
- 1 egg
- Salt & pepper
- 2 slices whole wheat bread
- 2 slices Swiss cheese
- 4 slices deli ham
Heat the olive oil over medium heat in a small non-stick skillet. Crack the egg into the skillet and cook over hard. Season the egg with salt and pepper as desired.
Meanwhile, toast the slices of bread. When the bread is done, place one slice of cheese on each slice of bread and layer the deli ham between the two slices of cheese. Carefully slide the egg onto the ham and arrange into a sandwich. Place the sandwich on a microwave-safe plate and microwave on HIGH for 30 seconds. Carefully cut the sandwich into two pieces and enjoy!
