This recipe is so simple, it almost makes itself. In fact, what really makes it special is what you decide to add to the cookies to make them uniquely yours. The basic recipe involves three ingredients, so you can take any extra effort you feel like adding and use it to come up with fun additions. Add your favorite peanut butter candies to a chocolaty batter or crush up leftover candy canes to mix in with a batter made with white cake mix. Some chopped walnuts would be great added to a batter made with carrot cake mix too. It's all up to you!
Another great benefit to this simple recipe is how easy it is to freeze a batch or two for those times when you don't even have enough time to make these quick cookies. Just wrap them in plastic and pop them in the freezer. Just make sure that you label them. Then, when the mood for sweets hits you, you can rest assured that you don't have to deprive your sweet tooth any more!
Cake Mix Cookies
- 1 pkg. cake mix (any kind will work)
- 1 egg
- 1/2 c. olive oil
Preheat the oven to 350 degrees.
Mix the cake mix, egg and oil until well blended. Drop the dough by rounded teaspoonfuls onto an ungreased cookie sheet -- allowing about 2 inches between each cookie.
Bake the cookies for 8-10 minutes. Allow them to cool on the cookie sheet for 1-2 minutes before transferring them to a wire rack to cool. Store the cookies tightly covered.
Suggestions: Devil's food cake mix is good with about a teaspoon of almond extract added. Yellow cake mix can be spruced up with either vanilla or lemon extract. A half a cup of miniature chocolate chips can be added to just about any cake mix for an unusual and easy chocolate chip cookie. The sky is really the limit!- Yields: about 4 dozen cookies
