Springtime Croissant Sandwich

  • 2 tsp. salted butter
  • 3 eggs
  • 2/3 c. diced ham
  • 2 oz. shredded sharp cheese
  • 6 oz. asparagus, cut into bite-sized pieces
  • 2 T. mayonnaise
  • 2 croissants, split in half

Melt the butter in a medium skillet over medium-low heat. Crack the eggs into the skillet and once the whites have started to turn opaque, begin folding them gently with a spatula. After a minute of this, add the ham, cheese, and asparagus and continue cooking until the eggs are scrambled to your liking, the ham and asparagus are heated through, and the cheese is melted.

Slather the mayonnaise on the cut sides of the croissants and spoon the egg mixture evenly between the two croissants. Serve as a sandwich and enjoy.
