Mexican Meatloaf

  • 1 lb. ground beef
  • 1 extra large egg
  • 1 cup rice
  • 1/2 cup salsa
  • Taco seasoning packet
  • 1 can of corn, drained
  • 1 medium onion, chopped
  • Salt and pepper to taste Toppings:
    • Nacho chips (crushed)
    • Shredded cheese

    Mix all of the meatloaf ingredients together until thoroughly blended. Place the mixture in a greased baking dish. Bake at 350 degrees for about an hour. Remove the meatloaf from the oven and sprinkle the cheese and nacho chips over the top prior to serving.
