Goat Cheese Dressing

This rich dressing is surprisingly light and perfect when paired with other intense flavors like fresh, juicy peaches or tangy sun-dried tomatoes.
  • 1/2 c. evaporated skim milk
  • 1/4 c. crumbled goat cheese
  • 1 clove garlic -- minced
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1 T. snipped chives
  • 1/2 tsp. dried dill

Combine all of the ingredients in a resealable jar. Seal with a tight-fitting lid. Shake vigorously until the ingredients are well mixed. Drizzle over salads featuring bold flavors.
