Eggnog Belgian Waffles

  • 1 1/2 c. all-purpose flour
  • 1 T. sugar
  • 1 T. baking powder
  • 2 c. eggnog (not low fat!)
  • 2 T. butter, melted
  • 1 egg, beaten

Heat a Belgian waffle iron.

Mix the flour, sugar, and baking powder together in a medium mixing bowl. Stir in the eggnog, melted butter, and the beaten egg until well blended. Add more eggnog (if needed) to thin the batter to the desired consistency.

Spray the waffle iron with non-stick cooking spray. Pour some of the batter onto the preheated waffle iron, close the top, and cook until the waffle is golden brown and crisp on both sides, usually 4-5 minutes. Transfer the waffles to a serving plate, and keep warm in a low oven until serving. Serve with the toppings of your choice.
