Bleu Cheese Dressing

Summer is here an the garden is producing an abundance of salad greens. No one likes to eat salad without dressing, so here is a recipe for my favorite salad dressing, bleu cheese.

Children generally don't like the taste of bleu cheese, however when I was a child we used to go to Bob's Big Boy once in a while. Bob's Bleu Cheese Dressing was the best and it never failed to get me to eat my salad. Although Bob's dressing is still available in some markets, it's not easy to find. What better way to satisfy this craving for bleu cheese dressing than to make it from scratch?

Now, on to the recipe! Be well, and good eating!

 

Bleu Cheese Dressing

This is a fairly good substitute for Bob's dressing. And, this dressing is versatile. Besides using it as a salad dressing, you can use it as a dip or put a dollop on top of a grilled burger. Some people even like to melt a bit of this dressing on top of a hot grilled steak.

  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup crumbled bleu cheese
  • Juice of 2 lemons
  • 1 Tbsp. honey
  • 1 tsp. freshly ground pepper
  • 1 tsp. salt (kosher, grey or sea salt preferred)
  • 2 Tbsp. fresh chopped parsley
  • 2 tsp. Worcestershire Sauce
  • 1 tsp. Tabasco (optional)
Mix all of the above ingredients in a bowl. After mixing, refrigerate for an hour or two before using. If is seems too thick, you can add more sour cream or a little milk or buttermilk to thin slightly.
